La Poiré Granit is the sublime expression of fruit from ancient trees, now measuring over twenty metres, which like all the other trees in the orchard have never been sprayed. The tradition says that it takes one hundred years for the trees to grow, one hundred years to produce the fruit and one hundred years to die. With a low alcohol level of just 3.5%, treat this like a wine - it has an edgy earthiness and terrific structure. Bordelet often serves it with pan-fried scallops; it would also work beautifully with goat’s cheese or a pear dessert.
